Red wine and aged cheese: Consider adding DAO to the charcuterie board

Red wine and aged cheese: Consider adding DAO to the charcuterie board

By the OmneDiem Editorial Team· Published October 17, 2026· 7-minute read

The short answer

Red wine and aged cheese are both fermented or aged, so each brings histamine and related amines to the table, and alcohol may slow the DAO enzyme your gut uses to break histamine down. Put them together and the load can stack up fast. A lower-histamine board, a slower pace, and a DAO enzyme taken with your first bite can all help. OmneDiem Histamine Digest provides 30,000 HDU of DAOgest® porcine DAO per capsule to help break down histamine from food and drinks in the digestive tract.*

Key takeaways

  • Wine and cheese is a “stacked” histamine pairing: two aged foods plus alcohol in one sitting.
  • Fresh cheeses and smart board swaps can lower the load without skipping the night.
  • What else is in your “bucket” that day, like stress or other foods, can change how you feel.
  • A DAO enzyme taken right before you start supports the histamine part of the picture.*
  • Not every wine reaction is about histamine. Sulfites and alcohol itself can play a role.

Why red wine and aged cheese hit harder together

Think of histamine like water running into a sink. Food and drinks turn the faucet on. DAO, an enzyme made mainly in the lining of your gut, is the drain. For most people, the drain keeps up. But a wine-and-cheese night opens two faucets at once, and the alcohol in the glass may slow the drain at the same time. That is how a sink fills faster than it empties, and why some people notice warmth in the face, a stuffy nose, digestive discomfort, or a pounding head by the end of the evening.

  • Aged cheese (Parmesan, aged Gouda, aged cheddar, blue cheese) builds histamine as it ripens, because the bacteria that create flavor also produce histamine and other biogenic amines. Fresh cheeses tend to sit much lower. See our guide to foods high in histamine.
  • Red wine typically carries more histamine than white, though levels vary widely bottle to bottle. Alcohol may also slow DAO activity and encourage the body to release some of its own histamine. We break this down in What Alcohol Is Highest in Histamine and Why Wine and Alcohol Can Change the Histamine Conversation.
  • The pairing effect: cheese and wine also bring companion amines like tyramine and putrescine, which compete for the same breakdown pathways. A cured-meat add-on stacks the load even higher.
The histamine sink: red wine and aged cheese fill it, DAO drains it Illustration of a sink. Two faucets labeled red wine and aged cheese pour histamine in. Alcohol and competing amines partially block the drain. DAO enzyme at the drain breaks histamine down. Two aged foods plus alcohol can fill the “sink” faster than DAO clears it. Supplemental DAO is designed to add drain capacity in the gut, right where food histamine arrives.* More in our histamine bucket explainer.

Build a gentler wine-and-cheese board

You don’t have to skip the board. Small swaps can lower the histamine load while keeping the evening feeling like a treat. Individual tolerance varies, so treat this as a starting point, not a rulebook.

On the board Usually higher in histamine Gentler swaps to try
Cheese Parmesan, aged Gouda, aged cheddar, blue cheese, Camembert Fresh mozzarella, burrata, ricotta, cream cheese, fresh goat cheese
Meat Salami, prosciutto, chorizo and other cured meats Freshly roasted chicken or turkey, sliced the same day
Extras Olives, pickles, sauerkraut, smoked fish Fresh apple or pear slices, cucumber, plain crackers, fresh herbs
In the glass Many red wines A smaller pour, or a white wine you know sits well with you
Sweet finish Chocolate, strawberries (possible histamine liberators) Blueberries, fresh melon, a simple shortbread

Your wine-night game plan

Before

Eat something first and pick your bottle. Arriving hungry and starting on an empty stomach can make the first glass feel stronger. Take your Histamine Digest capsule just before your first sip or bite, following label directions, so the enzyme is in your gut when the histamine arrives.*

During

Pace, pour small, and alternate with water. Spreading the same amount of wine and cheese over a longer evening gives your body more time to keep up. Lean on the fresh side of the board and save aged favorites for a small taste.

Next day

Jot down what you had. Note the wine, the cheeses, how much, and how you felt. Over a few evenings, patterns show up, and that log is useful to bring to your healthcare provider.

Why some wine nights are worse than others

Many people notice that the same glass of Cabernet feels fine one weekend and rough the next. The “sink” may already be partly full before the cork comes out. A stressful week, leftovers or other high-histamine foods earlier in the day, seasonal pollen, and hormonal shifts may all add to the load. Read more on stress and histamine release and the perimenopause and histamine connection.

What the research says, honestly

DAO is the main enzyme your digestive tract uses to break down histamine from food before it is absorbed. A small 2019 study of adults with food-related histamine reactions reported improvements in several digestive and other symptoms after four weeks of taking porcine DAO before meals. Larger, longer trials are still needed. Research on wine specifically is mixed: one study found no clear link between wine reactions and a wine’s histamine content, which suggests sulfites, alcohol, and other compounds can play a part. DAO is a tool for the histamine piece of a wine night, not the whole story.

Is it histamine, or something else?

Reactions to wine and cheese are not always about histamine. Sulfites, tyramine, alcohol sensitivity, and true food allergies can look similar. If your reactions are strong, sudden, or involve trouble breathing or swelling, seek medical care right away. For a side-by-side look, read Allergies or Histamine Intolerance?

Frequently asked questions

Can a DAO supplement help if I react to red wine and aged cheese?

If histamine is part of what you are reacting to, a DAO enzyme taken just before you eat or drink may help your body break down histamine from food and beverages in the digestive tract.* Histamine Digest provides 30,000 HDU of DAOgest® porcine DAO per capsule.

Why do red wine and aged cheese cause reactions for some people?

Both are fermented or aged, which raises their histamine and related amine content. Alcohol may also slow DAO activity. When histamine comes in faster than DAO can break it down, some people notice flushing, stuffiness, digestive discomfort, or head pressure.

Why do I react to wine some nights and not others?

Wine histamine levels vary by bottle, and your overall load that day matters too. Other foods, stress, seasonal factors, and hormonal shifts may add to the “bucket” before you pour.

Is white wine lower in histamine than red?

White wine is generally lower in histamine than red, but levels vary widely between bottles and styles, and wine reactions can involve more than histamine.

Which cheeses are lowest in histamine?

Fresh, unaged cheeses such as mozzarella, burrata, ricotta, cream cheese, and many fresh goat cheeses are generally lower in histamine than long-aged cheeses like Parmesan, aged Gouda, or blue cheese.

Does DAO help with every wine reaction?

No. DAO supports the breakdown of histamine only.* Wine reactions can also involve sulfites, alcohol, or other compounds, so DAO may help with some reactions and not others.
